Founded in 2011, Casa Jalisco Tequila Museum is a tribute to our origins in Amatitán, Jalisco sacred land of blue agave and birthplace of tequila. Inspired by generations of craftsmanship and deep cultural pride, we brought that legacy to the Caribbean, establishing our home in Cozumel, where culture, tourism, and the spirit of Mexico converge.
From day one, our mission has been more than offering a drink it’s about creating a living experience that connects each visitor to the story, the process, and the flavors that make tequila a true symbol of Mexican identity.
With locations across iconic spots on the island — Hacienda Antigua, Chankanaab, Punta Sur, El Cedral, Malecón, and Benito Juárez Park we’ve welcomed thousands seeking authenticity, culture, and a deeper connection to Mexico.
In every drop of our tequila lives a story born from agave, transformed by tradition, and proudly shared with the world.

Blue Agave – The Beginning
Everything starts with the Agave Tequilana Weber Blue Variety, the only plant on Earth that naturally produces the four key components for fermentation: glucose, starch, yeast, and water. Grown in the highlands of Jalisco, this agave is the foundation of authenticity.

Harvest – La Jima
Once matured (after 6–8 years), the agave is hand-harvested by jimadores who cut away the leaves to reveal the core the piña. This is the soul of tequila.

Cooking – El Horno
The piñas are steam-cooked in traditional stone ovens for 72 hours, sealed with earth and clay. This process brings out natural sweetness and caramelization — similar to pumpkin pie.

Crushing – La Tahona
Cooked agave is crushed with traditional volcanic stone tahonas, preserving its natural flavors while staying true to ancestral methods.

Fermentation & Distillation
The extracted juice is naturally fermented over 21 days, then distilled twice to ensure purity, clarity, and a smooth character.

Aging – Resting with Patience
Select tequilas are aged in white oak barrels from Tennessee, previously used for Jack Daniel’s whiskey. Over time, they develop richness, depth, and complexity.
